Waffles

We like breakfast anytime during the day!  Waffles are one of our favorites.

Ingredients:

2 eggs
2 cups of all purpose flour
1 3/4 cup milk
1/2 cup oil
1 tbls sugar
4 tsp baking powder
1/4 tsp salt
1/2 tsp vanilla

Directions:

1.  Preheat waffle iron.
2.  Beat eggs until fluffy.  Add in all other ingredients and mix until smooth.
3.  Pour mix onto hot waffle iron.
4.  Cook until golden brown which is usually when the steam stops.

French Toast

This is such an easy and tasty recipe.  They are so good, don't just eat them for breakfast!  This recipe was inspired by KitchMe.

Ingredients:

4 egg
23 cup whole milk
13 cup flour
13 cup sugar
12 tsp vanilla extract
14 tsp salt
18 tsp cinnamon
8 - 10 slice Texas toast or other thick bread
3 tbsp butter

Directions:

Combine all of the dry ingredients, then add milk, vanilla and eggs.  

Melt 1 tablespoon butter in a large nonstick skillet or griddle over medium heat. Working in batches, dip each slice of bread in the batter for 30 seconds on each side. Let some of the batter drip off, then place in the skillet. Cook for 2-3 minutes on each side until golden brown. Transfer to a plate and keep warm. Add more butter to the skillet or griddle, if necessary, and repeat with remaining bread. Dust with powdered sugar and serve with syrup.

Cinnamon Swirl Quick Bread

This is a wonderful and easy bread that can be made for any occasion or for any reason.  I found this great recipe on Taste of Home.

Cinnamon Swirl Quick Bread

Ingredients:

2 cups all purpose flour
1 1/2 cups sugar - divided
1 tsp baking soda
1/2 tsp salt
1 cup buttermilk
1 egg
1/4 cup canola oil
3 tsp cinnamon

Glaze:
1/4 cup confectioners' sugar
1 1/2 - 2 tsp milk

Directions:

  1. Preheat oven to 350°. In a large bowl, combine flour, 1 cup sugar, baking soda and salt. Combine buttermilk, egg and oil; stir into dry ingredients just until moistened. In a small bowl, combine cinnamon and remaining sugar.
  2. Grease the bottom only of a 9x5-in. loaf pan. Pour half of the batter into pan; sprinkle with half the cinnamon-sugar. Carefully spread with remaining batter and sprinkle with remaining cinnamon-sugar; cut through batter with a knife to swirl.
  3. Bake 45-50 minutes or until a toothpick inserted in center comes out clean. Cool 10 minutes before removing from pan to a wire rack to cool completely. Combine confectioners' sugar and enough milk to reach desired consistency; drizzle over loaf.  (I cut my bread into slices and then drizzle the glaze on the cut slices.)

Old Fashioned Biscuits

Biscuits and have been my nemesis for quite some time.  Then one day I saw a recipe on the back of a Clabber Girl Baking Powder.  I never buy this kind, but had to one day.  I had tried so many recipes, so I thought, "well, I will try this one too.  What do I have to lose?"  I did, and WOW!!  This is an amazing recipe that my family asks for several times a week.  This recipe makes about 8 - 10 biscuits but I usually double the recipe, which is easily done.  The secret to these biscuits is to knead them several times.  I was always told to be gentle with the dough, but this dough likes to be mah-handled just a bit.  When you do, they rise so high and have beautiful layers.  Before baking, you can place on pan and freeze.  Once frozen, you can place in a freezer bag.  Then whenever you want a biscuit, you can just pull out how many you want or need and bake them as the directions say.  You can also add blueberries or other berries to the batter, cook as directed and then top with a confectioner's sugar icing.

Ingredients:

  • 2 cups all-purpose flour
  • 2 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/3 cup lard (you can use shortening)
  • 3/4 cup buttermilk (you can use milk)
  • 1 tablespoon melted butter

Instructions:

In a medium mixing bowl stir together flour, baking powderr, and salt. Use hands to cut in the lard until the mixture resembles coarse crumbs.

Make a well in the center of the flour mixture. Add the milk all at once. Using a fork, stir just till moistened and dough pulls away from the sides of the bowl (dough will be sticky).

On a floured surface, lightly knead dough with floured hands for 30 seconds or till nearly smooth. Lightly pat dough to 3/4-inch thickness. Cut dough with a 2 1/2-inch biscuit cutter, dipping cutter into flour between cuts.

Place biscuits close together on a lightly greased baking sheet. Bake in a 475° oven for 11 to 15 minutes or till golden brown. As soon as you remove them from the oven, brush tops with melted butter. Serve warm.

Cinnamon Rolls

I am not a fan of cinnamon rolls but I LOVE these!  My family loves them too!  They are so awesome and easy to make, I give them away as gifts.  Thanks Paula Deen for the recipe.

Ingredients

Dough:

  • 1/4-ounce package yeast
  • 1/2 cup warm water
  • 1/2 cup scalded milk
  • 1/4 cup sugar
  • 1/3 cup butter or shortening
  • 1 teaspoon salt
  • 1 egg
  • 3 1/2 to 4 cups all-purpose flour

Filling:

  • 1/2 cup melted butter, plus more for pan
  • 3/4 cup sugar, plus more for pan
  • 2 tablespoons ground cinnamon
  • 3/4 cup raisins, walnuts, or pecans, optional

Glaze:

  • 4 tablespoons butter
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 3 to 6 tablespoons hot water

Directions

Heat oven to 350 degrees F.

In a small bowl, dissolve yeast in warm water and set aside. In a large bowl mix milk, sugar, melted butter, salt and egg. Add 2 cups of flour and mix until smooth. Add yeast mixture. Mix in remaining flour until dough is easy to handle. Knead dough on lightly floured surface for 5 to 10 minutes. Place in well-greased bowl, cover and let rise until doubled in size, usually 1 to 1 1/2 hours.

When doubled in size, punch down dough. Roll out on a floured surface into a 15 by 9-inch rectangle. Spread melted butter all over dough. Mix sugar and cinnamon and sprinkle over buttered dough. Sprinkle with walnuts, pecans, or raisins if desired. Beginning at the 15-inch side, role up dough and pinch edge together to seal. Cut into 12 to 15 slices.

Coat the bottom of baking pan with butter and sprinkle with sugar. Place cinnamon roll slices close together in the pan and let rise until dough is doubled, about 45 minutes. Bake for about 30 minutes or until nicely browned.

Meanwhile, mix butter, powdered sugar, and vanilla. Add hot water 1 tablespoon at a time until the glaze reaches desired consistency. Spread over slightly cooled rolls.
